Daikon and Butternut Squash Sauté
- 3 cups chopped butternut squash
- 2 cups chopped apple,
- 1 cup chopped Daikon radish
- 1 Tbsp. olive oil
- ¼ tsp. salt
- ¼ cup toasted pumpkin seeds
- Saute the squash, apple and radish in the olive oil until tender (5-7 minutes)
- Season with salt.
- Sprinkle with pumpkin seeds.
