Daikon and Butternut Squash Saute

Daikon and Butternut Squash Sauté

  • 3 cups chopped butternut squash
  • 2 cups chopped apple,
  • 1 cup chopped Daikon radish
  • 1 Tbsp. olive oil 
  • ¼ tsp.  salt
  • ¼ cup toasted pumpkin seeds
  1. Saute the squash, apple and radish in the olive oil until tender (5-7 minutes)
  2. Season with salt.
  3. Sprinkle with pumpkin seeds.
